Pernod is actually a successor of absinthe, the potent liquor that contained a toxic oil from wormwood in quantities that were thought to cause brain damage — and which was outlawed in 1915 in France. Pastis is an anise-flavored liqueur and apéritif from France normally diluted with water before drinking, generally five volumes of water for one volume of pastis. The nose reveals waves of anise, fresh garden herbs, carnations, fennel and licorice. With the addition of water, it turns milky-opaque and has a long, licorice-like finish.
