Herbsaint is an anise-flavored liquor currently produced by the Sazerac Company and originally made in New Orleans, Louisiana. Herbsaint was originally produced under the name “Legendre Absinthe”, although it never contained Grande Wormwood but the U.S. Government soon objected to Legendre’s use of the word “absinthe”.

In 1933, “Herbsaint,” a pastis, was made according to a French recipe; “Herbsaint” was so named for the New Orleans term for wormwood – “Herb Sainte.” Pure anise, hazelnut, potting soil, and fennel aromas with a supple, mildly sweet medium-to-full body and a resonant black licorice, mineral and pepper finish with touch tingling heat. Very straightforward and pure anise flavor that will work well in cocktails.
