The botanical list of Darnley’s View is fairly short; in fact, refreshingly short at only six botanicals. Juniper, Coriander Seed, Lemon Peel, Angelica Root, Orris Root and Elderflower. The aroma of Darnley’s View is gentle and sweet. There is juniper there, but it is mild. Darnley’s View is sweet, spicy and floral with a quite long, dry finish.

A spicy floral and vanilla nose, and a flavor that evokes soft, complex spice. Subtle citrus flavors lead to a distinctive juniper middle-taste, returning to gentle spice on the finish.

Clear. A very complex and aromatic nose of citrus and rose perfectly balanced with a subtle scent of juniper berry. On the palate the citrus and floral notes come through the juniper first, followed by coriander and cardamom on the mid-palate. The lengthy finish shows hints of caramel and vanilla, reminding us that this gin was made with a base of Oola Vodka.

Treaty Oak Distilling, one of Texas’s older distilleries, produces Waterloo Gin. Waterloo is a distilled gin as opposed to a compound gin. Distilled gins are made by placing the various botanicals into the column of a still while the wash is boiled.

The combination of flavors is big – Treaty Oak Distilling by no means intended to make this a soft or quiet gin. The lavender, grapefruit and pecan are a departure from traditional gin recipes, but they give Waterloo the Texas flavor they wanted.
