After distillation, Burrough’s Reserve is rested in Lillet oak barrels hand-selected by Desmond Payne. Aging gin is not particularly new — Ransom’s been doing it for years — but Burrough’s Reserve is certainly the first gin to be aged in old Lillet casks. A spicy floral and vanilla nose, and a flavor that evokes soft, complex spice. Subtle citrus flavors lead to a distinctive juniper middle-taste, returning to gentle spice on the finish.
