Alipus Mezcals are produced by artisanal family distillers who live in remote areas of Oaxaca, Mexico. Artisan mezcal distillers include the solids – not just the juice, making well-made artisan mezcals from Oaxaca richer and more complex than the mezcals called tequila. San Baltazar Guelavila was fermented in pine vats and distilled by Don Cosme Hernandez from agave Espadín grown at about 5,700 feet in hilly, white, and rocky soil.
